For those days when it's too hot to cook...

Ingredients

  • Honeydew melon, in chunks
  • Cucumbers, sliced thinly
  • Mint leaves
  • Feta Cheese, crumbled
  • Radicchio (optional)

Dressing

  • 1 tbsp avocado oil
  • Juice of 2-3 limes
  • 1 tbsp rice vinegar
  • Black pepper

Directions

  1. Arrange ingredients on a platter. Crumble feta over the top.
  2. Whisk dressing ingredients together. Pour over. Serve immediately.
