Ingredients: 4 Persian cucumbers 6 small tomatoes ¼ purple onion 3 tbsp. olive oil Juice of 1 lemon 1 tsp. salt Directions: Dice the cucumbers, tomatoes and onion. Dress with the oil, salt and lemon juice. Toss to combine. Serve immediately.
