Ingredients:

  • 4 Persian cucumbers
  • 6 small tomatoes
  • ¼ purple onion
  • 3 tbsp. olive oil
  • Juice of 1 lemon
  • 1 tsp. salt

Directions:

  1. Dice the cucumbers, tomatoes and onion.
  2. Dress with the oil, salt and lemon juice. Toss to combine.
  3. Serve immediately.
