
Ingredients
- 6 medium potatoes*
- ¼ cup extra virgin olive oil
- ¾ cup freshly squeezed lemon juice
- 1 teaspoon ground allspice
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 2 hard-boiled eggs, sliced
- 4 scallions, chopped
* I leave the peels on for added fiber and nutrients, along with lowering the glycemic index of the potatoes.
Directions
- Boil the potatoes in large pot until tender, about 20 minutes.
- Cut the potatoes into small squares and place in medium mixing bowl.
- Add the olive oil and lemon juice, then the seasonings.
- Gently mix the potatoes and place sliced eggs on top.
