Ingredients:

  • 1 can chick peas
  • 1 can red kidney beans
  • 1 can black beans
  • 1 pound of fresh green beans, blanched
  • 1 cup green onions

  • 1 egg yolk
  • 1/3 cup red wine vinegar
  • 1 Tbsp sugar
  • 4-5 cloves of garlic, minced
  • 1 cup olive oil (I usually only use ½ cup)

Directions:

  1. Rinse beans and dry them off as well as possible.
  2. Use a blender or food processor. Start blending all the ingredients except the olive oil. Slowly dribble in the oil and the dressing will thicken.
  3. Marinate at least 3 hours, overnight if possible.
