Ingredients:
- 1 can chick peas
- 1 can red kidney beans
- 1 can black beans
- 1 pound of fresh green beans, blanched
- 1 cup green onions
- 1 egg yolk
- 1/3 cup red wine vinegar
- 1 Tbsp sugar
- 4-5 cloves of garlic, minced
- 1 cup olive oil (I usually only use ½ cup)
Directions:
- Rinse beans and dry them off as well as possible.
- Use a blender or food processor. Start blending all the ingredients except the olive oil. Slowly dribble in the oil and the dressing will thicken.
- Marinate at least 3 hours, overnight if possible.
