Ingredients:
- 3 carrots
- ½ butternut squash
- 2 zucchini
- 1 large onion
- 2 celery stalks
- 4 tbsp. oil
- 6 chicken drumsticks
- 2-3 tbsp. paprika
- 4 tbsp. tomato paste
- Salt
- Pepper
- Water
Directions:
- Peel and roughly chop the vegetables.
- Sauté the vegetables in the oil for a few minutes, and then add the chicken, tomato paste and spices.
- Add water until the chicken and vegetables are just covered.
- Cover and simmer for 1½ hours. Serve over couscous.
