Ingredients:

  • 3 carrots
  • ½ butternut squash
  • 2 zucchini
  • 1 large onion
  • 2 celery stalks
  • 4 tbsp. oil
  • 6 chicken drumsticks
  • 2-3 tbsp. paprika
  • 4 tbsp. tomato paste
  • Salt
  • Pepper
  • Water

Directions:

  1. Peel and roughly chop the vegetables.
  2. Sauté the vegetables in the oil for a few minutes, and then add the chicken, tomato paste and spices.
  3. Add water until the chicken and vegetables are just covered.
  4. Cover and simmer for 1½ hours. Serve over couscous.
